MAP packaging (modified atmosphere packaging) is a dynamic process in which the closed container and the packaged product interact with each other causing the internal gaseous atmosphere to reach an adequate balance that reduces: the respiration rate, the accumulation of ethylene, the loss of moisture, the development of microorganisms.
With the packaging in modified atmospheres of vegetables, it is intended to create a dynamic balance between the metabolism of the fruit and the permeability of the film used.
